Vegan Flapjacks




After my Vegan Brownie post being viewed so much I thought that whilst I was in the kitchen making dinner I would try make a batch of flapjacks. I decided to take a twist on one of my favourite flavours of cherry and almond, and surprisingly it worked, well at least I think so!!

You Will Need:

1 large ripe banana (mashed)
115g of almond butter (or your nut butter of choice)
85g of rolled oats
20g of vegan protein powder
35-50g of desiccated coconut (depends how much coconut flavouring you like)
35-45ml of maple syrup (for a more authentic flapjack taste use golden syrup)
1 tsp of Moroccan almond extract
10 glace cherries finely chopped


Method:

1. Preheat the oven to 180 degrees celsius.
2. Mash the banana until it is extremely smooth, add in the almond butter and almond extract and mix thoroughly.
3. Add in all the dry ingredients: oats, protein powder, desiccated coconut.
4. Add the maple syrup gradually and mixing continuously. If you have made flapjacks before you will know that the mixture should be relatively thick and hard to work. Add at least 35ml of the syrup and if required continue to add more. Taste the mixture to ensure the mixture is sweet enough for your tasting.
5. Finally add the cherries and fold in.
6. Spread mixture into a tin that is lined with baking parchment
7. Wish the flapjacks luck and bake until golden brown for 12-18 minutes.

Allow to cool for 20-30 minutes, decorate with coconut and serve!
